Nigeria Recipes - Amala - Lafun - Ojojo - Diffo


Amala

Ingredients

Cassava preparation

1.peel the cassava tubers and soak for 3 days untill soft.
2.remove and mash with the hands.
3.spread and dry on a clean dry surface.
4.grind to powder and sieve to remove strands.

This is your lafun flour.


Lafun

Ingredients

Lafun flour cassava flour

Preparation

1.put water to boil in a pot allow the water to continue boiling for sometime.
2.bring down the pot and add the lafun flour a little at a time untill it is smooth and thick.
3.serve hot with soup of your choice.

Ojojo

Ingredients

1.a small tuber of wateryam.
2.diced onions.
3.chopped dry pepper.
4.groundnut oil.
5.a cup of water.
6.salt.

Preparation

1.peel the water yam and grate into a bowl,add water if it is too thick.
2.add the diced onions and the chopped dry pepper and mix thouroghly.
3.add salt and pepper to taste.
4.scoop a little at a time with a spoon and fry in hot oil until light brown.
serve with pap.

Diffo

Ingredients

1. gunea corn.
2. bean
3. grountnut.
4. salt
5. pepper
6. seasoning.

Preparation

1. cook beans and guinea corn untill tender.
2. when it is well cooked remove from the haet and mixwith groundnut flour,salt,pepper and seasoning. then serve.
